A simple recipe for Sicilian Pan Pizza with just a regular oven!

Preparation List for Sicilian Pan Pizza

  • Dough Ingredients:
    • 3 + 2/3 cups(440g) all purpose flour + more as needed
    • 1 tsp(5g) Baking powder
    • 1 + 1/8 tsp(4g) Active dry yeast
    • 2 tbsp(30ml) Extra-virgin olive oil
    • ~ 2 tsp(12g) Salt or to taste
  • Topping Ingredients:
    • 0.5 cup(120ml) tomato purée (Mutti brand is good if you can get it)
    • 1 lb(450g) fresh mozzarella cheese sliced into discs
    • 15 slices dried coppa
    • 20 slices dried salami
    • (Other toppings if desired)

Sicilian Pan Pizza Recipe

  • Activate the yeast. In a bowl add 1.5 cups(350ml) lukewarm (95F-105F/35C-40C) water, 1+1/8tsp(4g) yeast and stir together. Let the mixture sit for 5-10 minutes until the yeast bubbles up. If you are using instant yeast, you do not need to wait for 10 minutes for the yeast to activate.
  • Make the dough. Combine 3+2/3cups(440g) flour, 1 tsp(5g) baking powder, 2 tsp(12g) salt or to taste together with the yeast water mixture until well mixed (Stand mixer can be used but not required. I usually do this with stand mixer for 5-7min). Cover with plastic wrap and set aside at room temp to rise.
  • Rise. Once the dough has doubled in size (takes 40 min-1hour), add 1 tbsp(15ml) olive oil to the dough and kneed the dough until incorporated.
  • Prepare Baking. Preheat oven to 350F(175C), use another tablespoon(15ml) olive oil to grease a baking sheet or wide flat bottomed baking pan.
  • Shape the dough. Spread dough out to about 0.5 inch(12mm) thickness, the dough is very elastic so this can take some work!
  • Prepare Sauce. Add 0.5 cup(120ml) tomato purée to top of the dough and spread it out, done very easily with the back of a ladle.
  • Prepare cheese and bake. Now add 1 lb(450g) sliced fresh mozzarella cheese and bake in the oven at 350F(175C) for 20 minutes.
  • Prepare toppings and bake. Take the pizza out, add 15 slices of dry coppa and 20 slices of dry salami and other toppings you like and put it back in the oven for 5 to 10 minutes.
