You may not be able to go to fine-dining restaurants for months if you have a newborn at home. This recipe teaches you how to cook Rossini Beef Medallions so you can have the restaurant-level food while dating at home!

Preparation List for Rossini Beef Medallions:

  • Servings: 4
  • Active Time: 30 min
  • Ingredients:
    • 4 medallions of strip steak 1 inch thick
    • 1 tablespoon(9g) all purpose flour
    • 2 tablespoons(28g) unsalted butter
    • 2 tablespoons(30ml) olive oil
    • 4 slices prosciutto
    • 4 slices gruyere cheese
    • 1/4 cup(60ml) Marsala wine
    • salt and pepper

Rossini Beef Medallion Recipe

  • Fry Steak: Preheat oven to 400 F(205C). Heat a pan over medium heat until hot. Add 2 tablespoons(30ml) olive oil and 2 tablespoons(28g) unsalted butter to the pan. Once butter is melted, add steak to pan. Salt and pepper steak while in pan. Once steak is brown on one side, flip steak over, brown the other side. Mix in the tablespoon of flour and the 1/4 cup(60ml) of marsala wine. Cook until wine evaporates(~1 min), then take steak out of pan and take pan off of heat. Keep the cooked brown flour left in the pan.
  • Roast Meat.Coat a roasting pan with foil. Add a baking rack to the top of the roasting pan. Put steaks on the baking rack. Add 1 slice of prosciutto to each of the beef pieces. Add 1 slice of gruyere to the top of each of the beef pieces. Put the steaks in the oven (400F/205C). Roast until cheese is melted (about 5 minutes or so if you prefer medium-rare). Take steaks out and serve. I prefer to cook the steak to medium-rare if I do meal-prep so that microwaving later does not over-cook the steak.
  • Serving or Meal-prepping. Add browned flour, butter, marsala mixture from the pan to the top of each steak(optional). Serve with a vegetable side, I made some simple boiled asparagus here.

  2. Tried the steak, cheese and prosciutto cooked in butter and marsala. Served it with a homemade Greek salad on the side. It was delicious!
