Introducing an awesome recipe to clean out your fridge/freezer/pantry: pan-fried beef with vegetables in Friggione (aka Italian Sauté)!
Preparation List for Pan Fried Beef with Vegetables in Friggione

- Ingredients:
- 2 red bell peppers chopped
- 2 zucchini chopped
- 1/2 cup (120ml) white wine
- 1 lb (450g) potato’s peeled and cubed
- 1.5 lb (675 g) beef chuck roast cut into cubes about 1 in (2.5cm) thick
- 6 tablespoons (90ml) olive oil
- 1 white or yellow onion thinly sliced
- 1 lb (450g) seeded tomatoes, chopped (Campari tomatoes are best, roma will also work)
- 2 tablespoons (28g) unsalted butter
- Salt
- Pepper
- 2 sprigs rosemary

Pan Fried Beef with Vegetables in Friggione Recipe
- Boil beef: get a large pot, add 1.5 lb (675 g) of beef (cut in 1 inch/2.5cm thick cubes) to the pot(see image below). Fill The pot with enough water to cover the beef. Add 2 teaspoons (11g) salt to the pot and heat it over medium high heat until boiling. Once boiling, turn the heat down to medium, keep an eye on it to make sure it does not boil over. If it looks to be boiling over, turn the heat down for a bit. Boil beef for about an hour, making sure to stir and add water from time to time to make sure the pot does not boil dry.

- Fry Potatoes. Heat a large pan over medium heat, add 3 tablespoons (45ml) of olive oil to the pan. Add 1lb (450g) potato cubes to the pan and fry until golden crispy outside and soft inside (10-20 min). Remove potatoes and set aside.

- Prepare Vegetables. Add 2 tablespoons (30ml) olive oil to the same pan and fry 2 chopped zucchinis until done (zucchini is firm but easily pierced with a fork). Remove zucchini and set aside. Lastly, add the 2 chopped red bell peppers to the pan (and if the pan has gone dry, more olive oil). Fry bell pepper until soft and then set aside.


- Cook Onion and Tomato for Friggione. Add 1 tablespoon(15ml)of olive oil to the pan and then add 1 sliced onion. Once the onion starts becoming brown, add 1 pound(450g)tomatoes (seeded and chopped) to the pan and cook until much of the liquid evaporates (see bottom right picture below).




- Putting it All Together. Add the 1/2 cup (120ml) white wine to the pan that cooks Friggione and let it boil off, once mostly evaporated, add the cooked potatoes, the cooked zucchini, the cooked peppers, and the cooked beef to the pan. Add salt and black pepper to taste. Mix together and then add the 2 rosemary sprigs , cook together for 2 minutes. Turn off the stove and then add two tablespoons (28g) of unsalted butter and mix it in as it melts. Serve hot.
