Muffins are probably the easiest bakery item you can make at home. All you need to do is whisk! It’s also a great meal prep item for a quick lunchbox preparation or breakfast for little kids. Today, I will share a banana blueberry mini muffin recipe that has no added sugar, but is still very tasty. It helps your picky toddlers eat fruits without eating extra sugar.

  • Ingredients:
    • 3 ripe bananas (with brown spots or fully blackened skins)
    • 1 cup(150g)blueberry (fresh or frozen)
    • 1.5 cups(180g) all purpose flour
    • 5 tablespoon(78g) melted unsalted butter
    • 1 teaspoon(4g) baking powder
    • 1 teaspoon(6g) baking soda
    • 1 teaspoon(5g) salt
    • 1 teaspoon(5g) vanilla extract
    • 1/4 cup(60g) Greek yogurt
    • 2 eggs

Banana Blueberry Mini Muffin Recipe

  • Mash bananas. In a large bowl, press 3 bananas (with brown spots or fully blackened skins) with a fork.
  • Mix all materials. In the same bowl, whisk all the following materials until well combined.
    • 1 cup(150g) blueberry (fresh or frozen)
    • 1.5 cups(180g) all purpose flour
    • 5 tablespoons(78g) melted unsalted butter
    • 1 teaspoon(4g) baking powder
    • 1 teaspoon(6g) baking soda
    • 1 teaspoon(5g) salt
    • 1 teaspoon(5g) vanilla extract
    • 1/4 cup(60g) Greek yogurt
    • 2 eggs
  • Preheat oven and divide batter. Preheat the oven to 350F(175C). Prepare the muffin tin. Here I use the liners for the mini muffin tin and use a small brush to grease the regular sized tin. Divide the batter by 1.5 to 2 tablespoon sized scoop into the prepared mini muffin tin. You can use a small spoon for scooping but I highly recommend using a small cookie scoop (Link) as shown below to save time and avoid mess. You may have some left over batter like me to make 1-2 regular muffins (see the 2nd picture below).
  • Bake. Bake the mini muffins for 18 mins and the regular muffin for 20 min. Then let them cool down completely before enjoying. You can store them in the fridge for 3 days and freeze them for 3 months. For the frozen muffins, you can either defrost them for 2-3 hours in room temperature or microwave them for 30-45 seconds.
