This Authentic Shanghai Pork Spare Rib Recipe is fool-proof and delicious with sweet and sour flavor! 12345 is the ratio of the only 5 ingredients required that you can never forget!
Preparation List for 5-ingredient Pork Spare Ribs:

- Ingredients:
- 2 lb(1000g) cross-cut pork spare ribs (cut in small pieces)
- 2 tablespoons(30ml) Shaoxing rice cooking wine
- 4 tablespoons(60ml) regular soy sauce
- 6 tablespoons(90ml) Zhenjiang black vinegar
- 8 tablespoons(100g) sugar


5-ingredient Pork Spare Ribs Recipe
- Prepare Pork Ribs. Cut 2 lbs(1000g) pork spare ribs into small pieces if not yet. Soak them in warm water for cleaning for 15 min (See left below picture). Then use paper towel to dry them as much as possible (see right below picture).


- Fry Pork Ribs. Get a deep pan or a wok. Medium heat. Fry the prepared pork rib cubes (No Oil Needed!). The pork oil will gradually be released during this process. Flip the ribs every once in a while to make sure all sides are fried. Stop until all sides are golden brown (see bottom right picture). It takes around 10-15 minutes.


- Stew with 12345 Ingredients. 12345 means every 500g(1lb) pork ribs, we need 1 tbsp(15ml) of Shaoxing wine, 2 tbsp(30ml) of soy sauce, 3 tbsp(45ml) of Zhenjiang black vinegar and 4 tbsp(50g) of sugar. Here we have 2 lb(1000g) pork ribs, so we double the above ingredients and add them to the ribs. Then add hot water to fully immerse the ribs (Do not add cold water. It can negatively impact the meat texture). Cover the pot with a lid. Turn to high heat until water boils and then turn to medium low to stew for 30-40 minutes.


- Reduce Sauce to Form Glaze. After 30-40 minutes, remove the lid. Turn back to high heat to reduce sauce. Keep an eye to the sauce since the sauce can reduce very rapidly in the last few minutes and can easily burn the ribs. Stop the heat when you see ribs are nicely coated with sugar glaze as shown in below pictures (~5min).
